Whitman's Focaccia
Ingredients
- 2 cups warm water (100 f)
- 2 teaspoons (5g) active dry yeast
- 2 teaspoons honey
- 1/4 cup extra virgin olive oil
- 500-600g all purpose flour (4 to 5 cups)
- 1 tablespoon sea salt
- 25g grated hard cheese (parmesan, pecorino, etc)
- Put the yeast and sugar in a large mixing bowl. Stir in warm water gently and wait 10 minutes
- Mix in flour and sea salt, knead a bit for the gluten gods
- Cover with plastic and rest overnight in the fridge
- Line two half baking sheets with parchment paper and olive oil
- Add dough to sheets, cover loosely and let rise for 2 hours
- Preheat oven to 450
- Press dough to corners and make finger dents :) drizzle with olive oil and add sea salt and rosemary
- Bake roughly 25 minutes
- Microwave butter, gatlic, and herbs until mixed, brush on top for a sheen
- Let cool for 5 minutes in the pan before moving onto a cooilng rack
