Whitman's Focaccia

Ingredients

  • 2 cups warm water (100 f)
  • 2 teaspoons (5g) active dry yeast
  • 2 teaspoons honey
  • 1/4 cup extra virgin olive oil
  • 500-600g all purpose flour (4 to 5 cups)
  • 1 tablespoon sea salt
  • 25g grated hard cheese (parmesan, pecorino, etc)
  1. Put the yeast and sugar in a large mixing bowl.  Stir in warm water gently and wait 10 minutes
  2. Mix in flour and sea salt, knead a bit for the gluten gods
  3. Cover with plastic and rest overnight in the fridge
  4. Line two half baking sheets with parchment paper and olive oil
  5. Add dough to sheets, cover loosely and let rise for 2 hours
  6. Preheat oven to 450
  7. Press dough to corners and make finger dents :) drizzle with olive oil and add sea salt and rosemary
  8. Bake roughly 25 minutes
  9. Microwave butter, gatlic, and herbs until mixed, brush on top for a sheen
  10. Let cool for 5 minutes in the pan before moving onto a cooilng rack
